The season of summer in my city can be very menacing. Temperatures keep soaring and the humidity drains everyone out. Tan lines become the new body art and sunscreens find a place of honor in the closet. A walk for a few minutes down the street can leave you sweating like a furnace laborer. To stay hydrated is everyone’s challenge and evening showers is what everyone looks forward to. Summers can be bad but it also brings with the blessing of enjoying the king of all fruits – Mangoes! Varieties of fruit juices and drinks from mumma’s kitchen has for all these years kept everyone in the family refreshed every summer. This year, I had quite a lot of free time in hand and churning a yummy, fruity ice cream piqued my interest.
A very popular saying goes – ‘You can’t buy happiness, but you can buy Ice-cream and that’s almost the same.’ It’s true, not just for me but also for my dessert-loving dad! I made up my mind to give this a shot. I’ve never before tried to make ice-creams. This was my first and certainly wasn’t bad! 🙂
If you love fruity flavors and if ice-creams appeal to your palate, go ahead and try this easy to make, mango soft serve. It requires only 3 ingredients, no fancy tools and can be ready by the time your guests walk in for dinner! 🙂
Mango Soft Serve –
Preparation time – 20 minutes
Serves – 4
You will need :
1. Medium sized mangoes – 2
2. Double toned fresh cream – 1 cup
3. Condensed milk – Half cup (1/4th of the tin)
4. Sugar – 2 tablespoons
5. Mint for garnishing (optional)

Time to make the yummiest homemade ice-cream!
Preparing the cream
Pour the cream in a container and add sugar. Mix it well. Beat the sweetened cream till you get a proper consistency. It shouldn’t be runny and should be thick enough so that it doesn’t drip. Keep it in the refrigerator.
Preparing the mango mixture
Skin the mangoes and slice them into small pieces. Add condensed milk and churn it in the blender. A smooth, bright orange, creamy mixture is what you will get. Pour it out in a large container and keep it aside.
We’re almost done!
In the mixture of the mangoes and condensed milk, add cream and blend it again. Taste the mixture and add sugar if needed. If it’s too tasty, refrain yourself from tasting it over and over again! 😉
Setting it right
It should take about 7 to 8 hrs. for the ice cream to set depending on the temperature at which your fridge is set and the container that you use. An aluminium container is the best bet to set ice creams in. I didn’t have one so a usual plastic container came to my rescue. Check after 3.5 hrs. It is recommended to churn it again after 3.5 hrs to limit the formation of ice and to make it creamier.

Garnishing the glory
Scoop out the divinely wonderful, gustatory delight into a bowl and let a few bright mint leaves add to the appeal of the creamy treat! 🙂 Indulgence is bound to happen. 😉

Since, we have not used any setting agents such as gelatin or GMS powder, the consistency of this ice-cream will not be like the usual ice cream. It will be softer and creamier than the ice creams available in market.
